We take manufacturing very seriously here. We respect the times of the earth and the rhythms of nature. We use our hands throughout the process. We inherit ancestral Mexican procedures and techniques. We smoke in the only chipotle oven in Europe and we smoke it slowly. At low temperature. Our fermentation is done slowly for 2 years. And the whole process is seasoned with a good dose of affection. All this to achieve the genuine flavor we are looking for. A product that conquers and really does it.

Our garden is a declaration of intentions and principles. Because growing Mesoamerican products in the heart of Castilla is a challenge only suitable for the brave. But doing it, in addition, with ecological certification and with a deep respect for the natural environment and your well-being, is really daring.
And it is that La Retamilla, is not only the largest organic outdoor garden in Europe, it is our home, our dream and what gives meaning to the effort and affection that we invest every day.
Nobody said that the field was easy, but it is this land, its climate, the seeds originating in Mexico that we reproduce in our own genetic bank, which allows us to obtain chili peppers with incredible organoleptic qualities.
