2017 Le Fruit de ma Passion
The grapes of this vintage Champagne are fully biodynamic, hand-harvested and allowed to ferment spontaneously in neutral barrels. There is no malolactic fermentation, and when it is bottled for the second fermentation, it ages on the lees for 42 months before being disgorged.
A lot is going on in this Champagne. Floral saffron with spicy touches of nutmeg & white pepper alongside brioche and earthy notes of wood. It is round and grips you with its vibrant acidity. It was left open for some time when I tried it, and layers and layers of more flavours came, which I will let you discover yourself.
