This means it has an addictive oxidative finish that would pair perfectly with any cheeses, especially with some age; the funkier, the better. You could also sit with a glass and a bowl of walnuts while watching garbage TV on a Sunday; nobody is judging you. Like any Savagnin, it will have a laser acidity marked with loads of citrus and then that oxy finish of nuts, spice, and dare I say blue cheese?
