Jura white wines tend to have a tradition of being slightly oxidative, and this wine is the exact opposite and takes a more reductive style. The wine is consistently "topped up" as it ages, leaving no space for oxygen and then bottled after six months. The wine has a sincere freshness with notes of spiced pear, the complex, ever-present fruit, beautiful minerality, and a lingering waxiness on the finish. Yum!
