The grapes come from 50-year-old vines and are harvested with a modest yield of only 25 hectoliters per hectare and made entirely traditionally and, after fermentation, aged for 24 months on the lees in old oak barrels. The wine is then bottled without the addition of sulphur.
In terms of aroma, it is an incredibly clean and sulphur-free wine, almost like juice, supplemented with beach sand, slightly nuts and roasted onions, white flowers, yeast, matches, pears, ripe apples, melon and a bit of tropical fruit, has a bit of butter fat and a little brown butter, salted almonds, but overall very inviting.
In the mouth, the wine is far more acidic and tart... it gives tons of freshness, and very clean fruit acidity with apples and pears. Everything was delivered so creamy, ripe, and slightly opulent with a salty minerality. After all, it's adult candy ... vinous adult candy.
