2020 New Disco!
A grapefruit bomb with apple blossoms, tropical fruits, and a distinct salty finish. A complex wine for a complex customer.
Two separate blocks of Sauvignon Blanc are chosen and then split into two. One is fermented carbonically with whole clusters for two weeks(in CO2) and the other through a reverse saignee method. The wine is in contact with the skins for three weeks.
