2021 Les Justice Sauvages
An incredibly elegant pet-nat with lively little bubbles that carry flavours of red berries, currants, plums, grapefruit, & a floral finish. The wine makes me salivate & has no wild 'natural' notes. This is truly a wine for the people & is my choice for an aperitif any day of the week.
Blend of Cabernet Franc and Grolleau Gris from vines undergoing organic conversion, planted around 1970 in Bourgueil and Dampierre-sur-Loire, on clay-limestone soils with the presence of flint veins. Manual harvest and natural vinification: indigenous yeasts, bottled with residual sugars to create effervescence in the bottle, tirage in October 2021. Disgorged, unfined, unfiltered, no added sulphites.
