This fantastic cider is wildly fermented from one of Europes best cider regions. It's a combination of influences from Spanish, French, and English ciders.
The taste is enormously complex with a considerable depth of bitterness, which forms a nicely balanced sweetness and a fresh acidity. The cider is crisp, vinous, and dry, similar to what you may experience from a French crémant and with a fruity and robust aroma of ripe apples.
The cider is made from fifteen different local Basque cider apples and fermented for four months in steel before forming natural bubbles in the bottle. It is bottled without filtration or sulphur.
